Red Cabbage DelightThis easy to make, beautiful and delicious salad takes only minutes to make. Not to mention, it is packed full of nutrients!


1 small red cabbage

1/2 medium red onion

1 carrot

1/2 red bell pepper

lemon juice

1/8 cup olive oil

1/4 cup parsley

1/2 tsp sea salt


Take your cabbage and shred it thinly. Add about 1/2 tsp sea salt and mix well, put aside for about 20 minutes. Slice the onion, bell pepper and shred your carrot. Chop up parsley. Mix all the ingredients, add 1/8 cup olive oil and lemon juice from 1/2 a lemon. Refrigerate. Serve with sliced avocado and blue corn chips. Remember, that you can adjust all the ingredients to your taste.
